Lemon Drizzle Cake


It's been raining all day, the cold and soaking kind. I grabbed my boots and ran to the chicken coop to see if there were any fresh eggs waiting for me. I wasn't disappointed... 3 for the price of 2. (that huge one contained 2 egg yolks!)


Rain+fog+cold=baking time. I live by that rule.

This cake is one of my 'classics'. My dad has been requesting it on his birthday for the past 4 years, and every time I come home, he talks about my lemon cupcakes or this lemon drizzle cake, until I take action. (he has something for lemon I tell you..)

I adapted this recipe (a little) from Jamie Oliver's book 'Cook with Jamie', but you can view it over here.
I didn't have ground almonds this time, so I replaced it by more flour and it worked absolutely fine, although I would recommend you use the ground almonds if you can!
Also this time I decided to use freshly squeezed orange juice and orange zest for the 'lemon juice' aka the icing, but then again that's me freestyling...

Go on.. bake it! Have it with a hot cup of tea, or maybe some ice cream. 

I'm off to get myself another slice, in this household it won't last a day.
